does the scanner appear in the windows 10 devices?
how you try to use the epson software directly?
i hope you can use the explorer well so if you can open it and navigate to this directory windows\system32 see if you have a directory called "twain_32" inside there is a file named "wiatwain.ds" but the more important folder should be named "Epson". For example my is named "SCANPORT".
are you using just wireless or you still have a USB cable attached?
Just in case you forgot (i hope not) how to do the scanning, see below:
Steps to scan to Devices and Printers:
Power on your printer or scanner.
Place your document or photo on the scanner glass or automatic document feeder.
Search Windows for and open Devices and Printers.
Right-click your printer and click Start Scan.
Choose your printer or scanner, then click OK.
Choose your scanning source.
Click Preview.
Click Scan.
Choose your import options, then click Import.
One more thing go to the epson website and see if they have a new driver for your printer.
You can also called them and speak to a technician.
P.S. I guess you try to scan and windows wasn't able to see the scanner because of the change.
There is a possibility that windows 10 got corrupted because of the change.
Where is your printers USB plugged into?

How do I scan from printer to the laptop

I have a similar problem. I can use Epson Scan on my laptop and scan a single image from my WF-3520, but am unable to scan from the WF to my laptop. There is an option to Scan to Computer, but "Last Used"- my laptop can't be found. As I said my laptop can find the WF but not the other way round.
