A simple question regarding RAM

I always believed for system stability it was always best to use 2 RAM sticks of the same capacity (ie: 2x2GB 2x4 GB 2x8 GB) and preferably from the same manufacturer.
-Someones telling me that they are using 1x2 GB & 1x 8 GB and the system still runs OK... I always thought that uneven values would cause an issue when reaching the capacity of the lower sized RAM module as the data is evenly split from the board to the RAM, no? Even though the system recognizes the different RAMS. This is something I have never done and will never ever do.
