I accidentally pryed off FL11 and C279 in a recent screen repair. I'm in the process of repairing it, but I just want to make sure that I'm doing it the best way. So, with the two parts, I put a little solder paste at the pads, then use a hot air rework station at 250C to attach the components to the logic board? Does that sound about right?

Most important thing is your feel for your own reworkstation. If you can, get a little practise how high you have to go on dead boards but 250°C sounds too low. 250°C means your hotairgun is 250°C but the stuff you try too reflow is lower. But it really depends on your station.
Use a small nozzle and watch your airflow, to much and more stuff goes flying.
What you will need
good tweezers that really grip those small components
the reworkstation
some noclean flux can be helpful, but for those 2 parts you can manage without.
retin the solderpads and make them really shiny but do not leave to much solder on there
add some flux (if you want) makes the solder flow better
grap your tweezers and and position your filter and position it but do not let go with your tweezer
heat up until you see the solder melt (this process should not take longer than 10-45 seconds) if it takes longer you are using to low of a temperature which also is harmfull for the logic board
repeat that process for the capacitor
try not to use solder paste if you are new to this (you tend to bridge stuff and possible creating shorts)
