Couple of things to try, to isolate what the problem may be.
Try using the phone in [https://devicehelp.boostmobile.com/scenario/Moto_G5_Plus/Boost_Mobile/en/Activate_Safe_Mode|safe mode] to see if the voice to text feature is any better.
