Additionally, you can just restore it and jailbreak it.  :D  That's what I did with mine to turn it into an iPod touch.  Just use a jailbreak like [http://spiritjb.com/|Spirit] and you should be good to go.  The key is to get it hacktivated; iTunes then won't care what the phone looks like.
