Yes! There is no problem as long as you use the correct CPU! 18-Core Xeon W-2191B
Now before you do this consider the clocking Vs threads issue!
A single threaded process will run faster on your current system and much slower on the 18 core! As the clocking has a large effect here.
But!! A multi-threaded application can leverage the multiple cores of the CPU, but you do need meter how many cores makes sense given your work load.
I often find people go crazy going with too large a chip when a middle version would make more sense!
So if your multi-threaded work load is using more than 2/3rds of your work day then consider the bigger chip, I would still see if the 14 core will be enough. If it’s less than 1/2 of your work day maybe the 10 core is enough.
Just like Goldilocks and the three Bears! There is a balance! Not going too small or too big!

Yes, you can replace but you should not doing it because your computer components will not bear the 18 core Xeon processor but if you have the TDP then it is possible

FY - Apple sells the system with the 18 core chip so there is nothing wrong with the configs TDP.
