Update

I have a similar problem with my son's 2g, 8gig Touch. Little sister go hold of it! iTunes still recognizes, have tried hard reset, restore (DFU mode), upgraded to 4.2.1, replaced screen and digitizer, SAME thing! Takes charge, turns on and screen is apparently scrolling, can start some apps, just white/gray screen. Now what? (unit is out of warranty)... THANKS!

Kyle, did anything happen to the iPod? Did it get dropped, soaked or any other issues? Did it just stop responding? When you say grey screen, grey as in it comes on but goes grey or grey as in I can't see anything no change in screen when you turn it? Does itunes still recognize it? The more information that you provide the easier it will be to help you out. Thanks

DFU mode: hold home and power buttons for 10 seconds then let go of power and keep holding home for 30 more seconds (with your iPod connected) then try restoring that way.
