Hello Haylee, if you read ifixit articles, you will find that you did everything wrong. Rice is not to be used on mobile phones, keep it to make risottos or whatever you like best. The reasons are explained in length here https://www.ifixit.com/News/rice-is-for-dinner-not-repair. Also water damaged devices are never to be charged less they will be most likely damaged. My advice is to visit a local repair shop and hope for the best, although according to what you describe I would not expect much, water damaged devices are hard to repair and since this is an old phone it may not be cost effective to repair it.
Well if the screen is damaged I would expect that changing it would fix your problem. Touch function on ipads is governed by a layer adhered behind the outer glass if the glass breaks there is a high possibility that the touch function will be problematic even if the LCD is ok.
Touch ic tends to affect the whole screen in my experience. I would suspect the ZIF connector more at this point even if it looks ok under microscope there’s no way to look inside it.
More importantly you should know, that iPhone X is not “waterproof” but “water-resistant”. Particles of dust can get between the LCD and the sheets of the backlight and they are a nuisance especially on white backrounds . Two ways to get rid of them: replace the whole screen (easy but expensive) or buy a new backlight, peel of the old one carefully, and replace it (difficult but cheap). You will need minor soldering skills to desolder the old backlight and solder the new one. Also you need to take care not to trap new dust particles under the backlight in the process.

I don't know where to buy it from and wherever I found it, the price was insane.(1000$+) Whoever I asked about the matter, they are using superglue in gel form and applying it with a needle or toothpick. If anyone else would like to give an idea I would be vey intersted to hear it too.
I'm going to refer you to this : Home button + Power button doens't work after display replacement? apparently there are 3 tiny chips on the left side of the gsm card reader that create this problem if they are damaged. You'll probably need to go to a repair shop to get them replaced.
