Hello, I have an iPhone 7 without a screen, but it works fine. So, before buying a new display I would like to know if there is a way to get the address of the iCloud account using iTunes or other software.

If the iPhone is a trusted device on your Mac or PC, it’s possible iTunes could work to back up. Then you can restore the backup to another iPhone. This is a big maybe as it all depends if iTunes will ask you to enter a passcode on the phone. If you’ve never connected that iPhone to your computer before, it’s not going to work. You need a display.
However if you don’t know the password to the iPhone and / or the iCloud account, it’s not going to work assuming it’s a hand me down phone and not originally your phone.

It belongs to an old man and I never linked it to my computer, he doesn't remember the address and password, so I guess there is no solutions...
If the “old man” has a receipt, then he can call Apple Support and get it unlocked. If he can’t call Apple Support then he can “sell” it to you. Even a hand written receipt can work as long as someone hand writes the serial number. It will take a couple days but you can then get it unlocked. So there is hope.
Of course, there is that small detail with the screen. You can at least call Apple before you go through the trouble of replacing the screen to double check if they will help you. You need to get the process going anyway and it will take time. Once you get the ball rolling and get an e-mail that the unlock has been approved you can go replace the screen. Just don’t tell Apple it doesn’t have a screen as that will open up a new issue of them not wanting to help you because the phone is unsalvageable from their limited point of view.
Of course whether or not they will be able to get your in with the original iCloud account is another question. However, you can access all the data if it was backed up on iCloud.com
