iOS update stuck on white screen, need to recover files.

After being prompted to update to iOS 11.1.2 my iPhone loads up approximately 99% through the progress bar, then stops. I left the iPhone for 8 hours in order to update however upon coming back and/or restarting it always gets stuck at what seems to be 0.5mm from the end.

I would return the iPhone to Apple straight away if I didn't have my Photos and Videos on it (which I never backed up) I have found similar issue happen to a user here with iPhone 6 plus (iPhone 6 Stuck on Apple Logo with Progress Bar Not Moving After Update)

However my real question is if and how it'd be possible to extract the Data from this iPhone, be it Apple service or software that allows me to do so. I am able to unlock the phone when prompted by laptop/desktop iTunes to connect however the "Trust this computer" button doesn't pop as it's covered by white iPhone update screen..

Any help will be appreciated,
