HD change can not see drive?

Per the youtube video I changed HD in my MacbookAir. I am uncomfortable that I got the flat ribbon connector to the HD correct? How to tell for sure? when I try to install OS from external DVD it seems to go find until I must select the desk, and that window is emply. I know I need to format, but that option is not available? How do I know if disk is connected correctly? How do I bring up Disk Utility to format?

You have to format and install a system on your new hard drive. Please start up from your system installation disk ( hold down the C key after inserting the DVD). Go to the second screen pull down menu to Utilities > Disk Utility. Select your hard drive in the left hand column. Format the drive and then give it one partition. Quit Utilities and continue with the system installation. If you can't see the drive in utilities you may need to set the jumpers on the drive to slow it down to 1.5 Gb/s as it may be rated at 3 Gbs/s. For data on doing this, do a web search for the name of your drive and jumpers.

Mayer - I do not seem to find a second screen. Hold C, or Alt or Command R all yield the same result; the language selection screen. I don seem to get to the disk utilities option?
