I recently bought a used 2015 15” Retina MBP. I am planning to reapply the thermal paste, but I was wondering what all I can upgrade to make sure that I can get the full performance out of my MacBook.

Your choices are limited to what the logic board already has for memory so make sure the system you bought has enough. If not it would require a new logic board to get more RAM ($$$)
Other than that you can upgrade the blade SSD MacBook Pro 15" Retina-scherm mid 2015 Vervanging van de SSD.
As far as cleaning and applying fresh thermal paste I would hold off doing that. Instead I would first monitor the systems temps using a app like TG Pro to see where things are with what you are doing. Then after awhile then review if its needed or not. I often find people are too eager and if there haven’t done it before end up messing up the logic board and besides the heat sink maybe bad Vs the need to refresh the paste. You’ll want the full version to gain the logging.
