To the best of my knowledge I have not downloaded anything except a few photos. But, my laptop is FULL of files and apps. Can someone explain (in simple terms for an idiot) how they got on my system ?

If your laptop has a Windows OS, try running a full A/V (Anti Virus) scan of the HDD to ensure that there are no viruses in the system.
If you have no 3rd party AV program installed in the laptop, use Windows Defender to do a full scan. (If Win 10 installed, go to Start > Settings > Update and Security > Windows Security > Virus and Threat Protection > Scan options > full scan).
Also download, install and run this program - free edition to check for any malware that may be installed in the HDD.

I will try to do what Jayef says but where are all those files and apps coming from ? Do cookies create files ?

Some links that you may have inadvertently clicked on whilst browsing the internet can contain malicious software, which can cause files, other programs etc to be downloaded from the internet and are then running in the background unbeknownst to you and are doing more of the same
That's what viruses and malware can do.
Does your computer have AV software installed and is it up to date?
Out of date AV software is only slightly better than no AV software at all as viruses and malware are constantly evolving to try and beat the computer's protection systems and gain access for whatever reason
Viruses and malware are usually one step ahead of the AV programs which are always playing catchup in an effort to try and stop them from causing problems
