extracting data files from replaced hard drive

I am able to see my old failed drive files when attached by USB using a drive adapter. How can I "move" my rather extensive address book data or other similar extensive system data to the newer OS Install Running MAC OSX 10.5.8? I hope I do not have to "rebuild" this data.
