How do I figure out why is it that every time I accelerate my rpms Rev high n low until I let up on the gas this happens every time I go to go

This does occur if you have an automatic transmission and it is shifting gears.

This can also happen with a manual transmission and a worn clutch (slipping). You'll have to provide more information for a diagnosis. What engine is in the car? What type of transmission? Has any work been done recently? Is the problem random, or does it happen under certain circumstances? With some more information, we'd be happy to help.

It sounds like it is something slipping inside the transmission. I'm afraid you'll need to find a good mechanic and have them look at it.
Chrysler econo Mode?
CVT does not shift gears so the RPMs should not go up and down, you marked the answer as good???

You engine needs to rev to accelerate you need to "use" your RPM to accelerate
