A coworker has the 2007 20 inch iMac g7 with core 2 duo 2.0 I believe. Rather than lugging it around he bought an ssd for me to install at home and just Bring into work. I have many things at my disposal. All vm's etc.
Wondering what my options are to install osx mav before physically installing in the computer?

Look up the serial number on the everymac website and see what the latest OS version is supported.

You'll need to nail down what the other system is before we can really help you here. Depending on the model you maybe limited on what OS-X version you can use.
